If you are still making pancakes with 100% white flour – I have one question for you – why? White flour is as null and void of nutrition as are the chances of cashing in on a prenup put together by Donald Trump! And if you can substitute at least some of the white stuff (or even all of it) with whole-grain good stuff, then why wouldn’t we do that? Well, of course we would!

At this point in time, white flour has some serious competition in the whole-grain flours department, and for me, whole-grain pastry flour is the king of the heap. Whole-grain/wheat pastry flour can replace white flour in most recipes – and buyer beware – pastry is the word you’re looking for in front of flour on your bag of whole-grain goodness. I primarily use this in all my non-yeast baked goods such as cookies, pancakes, muffins, quick breads and cakes and none would be the wiser, except for your GI tract, your Calvin Kleins and your family doctor. Throw in a little oat bran or flax meal and you are on your way to greatness. If you must include a smidge of white as you ween your way to the other side, then so be it. Why us humans have it in our silly little heads that healthy and heavenly can’t be in the same sentence when referring to food is beyond me – well, let’s get our collective heads around it – like 50 is the new 30, ok 35 – healthy is the new heaven.

1. Get the dry ingredients in a large bowl.

2. Whisk them all around.

3. Get the wet ingredients together.

4. Add the melted butter.

5. These handy little pots of apple sauce make it easy to add to any batter. Add it in at the end.

6. You’ve got your wet and you’ve got your dry.

7. Now put them together with a few quick strokes. Do not overmix!

8. Fold in the applesauce.

9. And there you have it – get ready to make pancakes.

10. Get your pan nice and hot and swirl in a little oil.

11. I use a 1/4 or 1/3 cup measure for even, easy batter dispensing.

12. See? Easy, even batter dispensing.

13. Flip when bubbles appear and the edges brown a little and looky, looky – whose a short order cook now?

14. Move to a rack and keep going.

15. Another drizzle of oil.

16. More easy, even dispensing.

17. Bubbles mean get ready to flip.

18. And flip.

19. Move them to the rack and …

20. Add a little more oil and …

21. Another round of pancakes, and how about mixing it up –

22. A sprinkle of cinnamon or –

23. Add a few blueberries, right out of the freezer.

24. Flip and keep going until all you have is an empty bowl and –

25. A big pile of pancakes cooked to perfection.
