Meet the best of two beefy worlds – stew & stroganoff. For a pot of deep, rich beefy stew, get yourself some killer beef, slice a couple of onions, mince a little garlic, add a few glugs of red wine, invite tomatoes to the party and you will be deeper & richer – and I’m not talkin’ love & money, I’m talkin’ stew (turned stroganoff) – than you ever thought possible.

This can be cooked in the oven or the slow cooker, so there are no excuses now! This stew leaves the veggies on the side and takes a hard left down stroganoff street thanks to a cup or two of sour cream. Ladle this over a mess of buttery egg noodles and you’ve turned your beef stew into stroganoff in one fell sour cream swoop!

1. Cube up your beef while you’re heating up a pot.

2. Gather the other ingredients.

3. Sear the beef in a generous swirl of olive oil. I have a browning feature on my now-defunct pressure cooker/slow cooker, but for those of you who don’t, simply use an oven-proof pot on the stove. Once seared with lots of brown bits, remove it from the pot while you get the rest of the ingredients going.

4. Start sweating your sliced onions in the juicy bits left by the beef. Add a little olive oil if you need to.

5. Add the minced garlic and sauté until soft.

6. Add the red wine.

7. And the diced tomatoes and brown sugar.

8. Stir in the tomato paste and the beef stock.

9. Add the beef back to the pot.

10. Stir it all around and time for a nap.

13. Time for the secret ingredient – sour cream.

14. Give it a stir.

15. Give it a taste – if you want more tang, add a little more of the white stuff.

16. Roughly chop a handful of parsley and set aside ’til serving time.

17. Get a pot of egg noodles cooking.

19. Drain ’em.

20. Butter ’em up.

21. Oil ’em down – we’re talkin’ a quick dribble.

22. Always S & P – and give ’em a good toss.

23. And bring it all together – finishing with a healthy sprinkle of parsley – and you will miss it, if it’s not there (the parsley). Amen.
